This is really easy.
So easy, that you might hate me for opening your world to this sweet, Nutella-flavored, white chocolate-enhanced mini fudge squares, all bursting with juicy blackberries. Because it’ll be hard to stop at one square.
But I’ve done it to you before, and I hope you understand that I’m not trying to sabotage your diet. I’m not trying to make you cave in to every chocolatey craving you encounter. I’m just trying to make the world a better, happier place. Because who isn’t happy when there’s fudge?
And as an added bonus, this recipe will not only make you feel super efficient (since it takes oh, about three minutes to “cook”), but it will also help you test your patience as you wait at least two hours before you can try a mini square.
Mini Blackberry Fudge Squares
8 oz. white chocolate chips
3/4 cup Nutella
3/4 cup sweetened condensed milk
3 tbsp unsalted butter, cut into 1/4 inch pieces
1/2 fresh blackberries
Combine all the ingredients (except the blackberries) in a medium microwave-safe bowl. Heat on full power for 1 minute, then remove and stir. Everything would have started to melt but you’ll still have some lumps. Heat again in 30-second intervals and stir until the mixture turns smooth. I ended up microwaving everything for a total of 3 minutes.
Scrape the mixture onto an 8×8 baking pan and lightly press the blackberries on top of the fudge. Chill in the fridge for at least two hours, then cut into 1-inch squares.
I told you it was easy.
It’s best to keep the mini squares in the freezer until ready to serve. Each candy-like square has the right amount of richness and sweetness, nicely offset by the mellow tartness of the fresh blackberries.
Of course if you don’t want any fruit in your fudge, you can just sprinkle some espresso salt on top. Or leave it plain. But using blackberries automatically makes the fudge squares taste fresher and lighter.
