Banana Oatmeal White Chocolate Chip Cookies

One of the regular shows on my DVR is The Real Housewives of New York City, and I think the most entertaining housewife is Bethenny (even though she’s not really a housewife haha). I’ve written about her Skinny Margarita before and now I’m currently reading her book Naturally Thin (which I’m loving btw, it’s so sensible and realistic. But more on the book next time). One of the recipes in the book is for Banana Oatmeal Chocolate Chip cookies – and as soon as I saw it I knew I wanted to try it! I’m not posting the recipe but it’s pretty simple; I think anyone can take any regular oatmeal cookie recipe, add in a couple of mashed bananas, and some chocolate chips.

Anyway last night, the boyfriend came back from his week-long vacation and I wanted to surprise him with some Welcome Home cookies. And of course I decided to make these babies! I made some modifications (used white chocolate chips instead of regular chocolate, and mashed 3 bananas instead of 2 heehee) and they turned out soooo soft and chewy and sweet. They also tasted cleaner, and more nutritious than just regular chocolate chip cookies – woohoo!

Look at how delicious those look! I’m really glad I tried these cookies. And now that I think about it, the combination possibilities with oatmeal cookies seem endless: next time I think I’ll try coconut and chocolate chip, or banana and peanut butter chips…
