Salted Caramel Brownie Bites

Alternate titles: Rolo Brownies Bites with Espresso Salt. Easiest Salted Caramel Brownies Ever. Cake Mix Brownies with Mini Rolos. Adorable Brownies with Teeny Tiny Rolos. Lazy Girl’s Brownie Bites.

These little rounds of fudgy brownies are stuffed with tiny chocolate covered caramels and lightly sprinkled with espresso salt.

They are extremely easy to do – dangerously easy, actually – that I wanted to make another batch immediately after the first was done.

They’re another version of lazy girl (or lazy boy) treats because I used store brought brownie mix and Rolo minis (already unwrapped, so I’m saving even more time). I amped it up with an additional dose of dark chocolate chips, plus a little sprinkle of crack. I mean espresso salt.

I think boxed cake/brownie mixes are pretty perfect as they are, and there really wasn’t any need to add more chocolate since I picked the fudgiest mix I can find, nor was there any need to stuff not one, but two, caramel candies in each brownie. What can I say, I love an extra Rolo (not to be confused with YOLO). So did I go a little overboard with this recipe? Yes, yes, I did. But sometimes overboard and over-the-top make for the most ridiculously good recipes.

And these were insanely good brownies. Especially when they’re still warm from the oven, and the inside is like when a molten chocolate cake and caramel fudge got married and had a baby.

That baby is a fudgy, silken, melty mix of milk chocolate covered caramel, dark chocolate chips, and warm brownie mix. A baby of dessert heaven.

These brownie bites still taste incredible even at room temperature, or the day after, or chilled for a couple of days, or straight from your freezer stash in the middle of the night.

Yield: 24 brownie bites

Salted Caramel Brownie Bites

Ingredients

1 boxed fudge brownie mix (I used Duncan Hines dark chocolate fudge brownies)
2 large eggs
1/3 cup coconut oil (you can also use vegetable oil)
1/2 cup dark chocolate chips (I used Guittard semisweet chocolate chips)
48 mini Rolos (or 24 regular Rolos)
2 teaspoons espresso salt or any other flaky salt
butter or extra coconut oil for greasing pans

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl, combine brownie mix, eggs, and coconut oil. Stir until well blended. Fold in chocolate chips.
  3. Grease mini muffin pans with butter or oil, and scoop a half tablespoon of brownie batter in each muffin cup (or fill to a third). Press two mini Rolo candies in each cup, then top with another half tablespoon of brownie batter. Mixture should be enough for 24 mini brownies.
  4. Bake at 350 for 12 minutes. Sprinkle espresso salt or coarse sea salt on top. Let cool for at least 15 minutes before serving.
