Dish of the Week | Roast Suckling Pig from La Buca di Ripetta, Rome

Crispy crackling skin, tender meat, and a salty stuffing of liver, fennel, and rosemary all create this luscious roasted suckling pig dish from La Buca di Ripetta in Rome, Italy. This was one of my very favorite meals of all time, and definitely one of the most delicious. The maialino da latte al forned con patate was utterly perfect: roasted suckling pig served with thinly sliced and heavily seasoned potatoes, each creamy bite the perfect accompaniment to the pork.  

Buca was highly recommended by the owner of the boutique hotel we stayed in during our honeymoon, and the food was so good, we came back twice for dinner. They also have an incredible cacio e pepe, and fried artichokes – classic Roman food. It’s within walking distance to Piazza del Popolo and Piazza di Spagna. The next time we are back in Rome, this would be our first stop and this dish my first meal.
