Peanut Butter Cookies

So I will be spending Christmas Day with the boyfriend and his family and I’ve been racking my brain on what I can bring and share with everyone. I’m definitely bringing sweets (no question about that) but what?? Well, I love cookies. And I love peanut butter*. And I love surprises. So… I made my very first batch of peanut butter cookies with a a surprise inside!

I did a test bake tonight because I wanted to try out the recipe first, and based on the three people who’ve tasted it so far tonight (me, Sabs, and Sara) – they turned out very yummy! I will be bringing the rest to work tomorrow and if I get more rave reviews, then I’ll be whipping these up again on Christmas Eve…

Recipe from Better Homes and Gardens

I started with the dough:

And then the fun part – unwrapping the mini snickers (which is the little surprise inside the cookie!) Not surprisingly, my unwrapping process went something like: grab mini snickers from giant bag, unwrap, drop in bowl, grab mini snickers from giant bag, unwrap, pop in mouth, grab mini snickers from giant bag, unwrap, drop in bowl…). Here they are ready to be placed in the middle of each cookie:

After about 15 minutes in the oven, I let it cool and moved them around a bit to make sure they didn’t stick to my disposable cookie tray heehee:

Of course I had to try one immediately! Do you see the surprise peeking out from the middle?

And now all packed up and ready to go with me to work tomorrow:

I am so proud of these cookies! And it’s taking a lot of will power not to get a glass of cold milk and another cookie…

*I don’t love peanut butter as much as I love chocolate – but I thought it will be very challenging to bake some perfect chocolate chip cookies. Plus, the idea of a peanut butter cookie with an unexpected filling is really awesome!
