Why did I not think of this yet??
You all know about my love for avocados, and the numerous ways I enjoy it. I read today’s recipe from The Kitchn (one of my favorite food/cooking blogs) and I can’t believe I haven’t tried this yet! Avocado Toast for breakfast – so simple, so healthy, so pure and tasty.
You simply toast some good bread, mash an avocado on top, and sprinkle with salt and pepper. Yum.
I can imagine beefing this up for more protein with a slice of cheese (I love Cabot’s habanero cheddar or any sharp cheddar), or even an egg (fried, scrambled, hard-boiled). It won’t be vegan anymore, but it will still be tasty. Since I sometimes work out in the mornings, I imagine this would be the PERFECT post-workout breakfast, with the combination of carbs, fat and protein. Maybe with a side of skim milk or a green monster smoothie too.
I am a big breakfast eater and I usually plan my breakfast the night before. I love scrambled eggs, or oatmeal (overnight oats or hot oatmeal – I love them both), or Greek yogurt – always with a side of fruit and a glass of milk. Tomorrow I know exactly what I’ll be eating: avocado toast! I can’t wait to try it. I might even make it for a snack later…

This sounds really great! I think avocado simply mashed with a little salt and pepper would be fantastic in the morning! I go a lot more simple in the morning with either a high-protein cereal or low-fat cottage cheese and always with a side of fruit!
Oh yum! I love avocado. I usually go with simple guacamole, but this does look like a fabulous post-run option…and I have a ripe avocado on the counter!
What an awesome idea! I’ve never considered avocado for breakfast, but why not?? It’s a pretty perfect way to get the day started!!
Why didn’t I think of this too? It’s so simple, but I bet it tastes so deliciou. I love avocados, especially in salads or guacamole!

seriously, make it. it changed my life…especially if you like avocado on toast.
I love using avocado on my sandwiches instead of mayo or cheese. The consistency and flavor pairs perfectly with some cucumber, tomoatoes and spinach or with my fav lunch meats: turkey or chicken. Definitely diving head first into a lunch featuring the avocado tomorrow

how funny! another friend of mine posted about exactly the same thing, avocado on toast, some time ago. she’s in australia. over there, they like it with a bit of butter and a sprinkle of black sauce (Worcestershire sauce) or sometimes with some shredded cheese.
me though, i’m kind of over it. it seems, here in CA, they put avocado on everything!
Read your post just in time! I’ve been scratching my head about what to feed my picky toddler. This is worth a try! Healthy and easy to make!
Ahh, cheese, avocado and bread — an amazing combo! I used to make glorified grilled cheese with avocado when I cooked for one. I still crave them!
I love avocado. And Cabots Hot Habanero Cheese (since you mentioned it.) But I am not sure how I feel about avocado toast for breakfast!! I do love avocado on say like an eggs bennedict or an egg and cheese sandwich. So on second thought….haha.

I loveeeeeee avocado.. I’ve tried avocado on toast, and I called my recipe an Avocado Tartine – I was trying to be fancy. I got the idea from a bakery named Le Pain Quotidian.. so good. Really like your blog.. first time visitor.
