No Flour Orange Peanut Butter White Chocolate Chip Cookies

When Lindsay of The Ketchup Diaries asked me to do a guest blog post last week with my favorite recipe, I immediately knew I wanted to make “Miracle Cookies” – the cookie that is so sweet and tasty that I can actually stop at just one, and that by itself is a miracle! This week I decided to try a variation of this cookie and share it with my co-workers for Cookie Wednesdays, a wonderful tradition started by the Search department of Overdrive Interactive. I love Cookie Wednesdays because not only do I get to try different cookies brought in by my co-workers, but it feels like such a treat in the middle of the week. I decided to make No Flour Orange  Peanut Butter  White Chocolate Chip Cookies.

Yes, it’s a mouthful, but it is very simple and easy to make. Here is all you need:

1 cup creamy peanut butter
1 cup dark brown sugar
1/4 cup white sugar
1 egg
2 tablespoons vanilla extract
1 cup white chocolate chips
1 1/2 tablespoons orange zest

Same instructions as Miracle Cookie, except instead of putting a square of dark chocolate on top of each cookie, I mixed in white chocolate chips:

Preheat the oven to 350. Combine all the ingredients in a big mixing bowl. Make 2-inch rounds and place evenly on a cookie sheet. Flatten the top of each cookie gently (since these cookies are flourless, they basically hold their shape because they are so dense. So if you gently flatten the tops, you won’t end up with just cookie balls). Bake for 15 minutes. Let the cookies cool and enjoy!

Each crumbly cookie has a hint of orange flavor, which pairs nicely with the sweet white chocolate chips and the almost salty peanut butter. My friends really liked these, and of course I did too.
